Raj Pavilion in the ITC Windsor is a beautiful and regal restaurant, inspired by the elegant architecture of British greenhouses. A couple of months back, we visited this restaurant to relive the experience of the last meal served on the Titanic, an experience that you can read about here. Under the aegis of Cuisines of the World – one of the culinary initiatives of ITC Hotels under our philosophy of Responsible Luxury, the restaurant is now hosting Tres Magnifique, a classic French food menu designed for the festive season. Not a cuisine commonly found in Bangalore, we were quite excited about the menu, and the experience was noteworthy.
The extensive menu includes various popular dishes like such as soupe a l’oignon francaise, risotto of mushrooms, Civet de coq, Potato gnocchi with leaf spinach cream and stewed apple with blueberry crumble. There was a curated set menu designed for us. We started with a classic – the Vichyssoise – a creamy potato and leek soup topped with almond butter. Nice and warm, a good start to a winter meal. A mushroom vol-au-vent followed – that was beautifully done, and we got several helpings! The cheese soufflé topped with paprika sauce looked like a pair right out of Julia Child’s book. A nice crust and within was the puffy cheese, while the paprika balances with the spicy edge. Almost a meal in itself.
In the mains there were two non-vegetarian and one vegetarian selections. Sole Meuniere was beautifully rendered with caper butter sauce and a hint of lemon. The texture of the fish was spot on complementing the dish very well. Coq-au-vin – the classic chicken in wine – is one of my favorite French dishes. And this was again spectacular. The chicken was braised and cooked to absolutely perfection. But perhaps the most popular dish on the table was the Vegetarian Ratatouille – that had individual vegetables rolled up and baked – quite an interesting take on the classic.
A brilliant meal is an easy way to summarize the experience. The classic French dishes would be featured in the dinner buffet at Raj Pavilion along with interactive live stations such as soufflé, sweet and savoury crepes, croque madame amongst others.
