Hey everyone – how’s it going? I am in Amsterdam! A slightly sudden trip, but a welcome surprise. You’re going to get a lot of updates soon. But first things first. Chef Sweety Singh is in our city, and brings an authentic culinary experience from Punjab at The Oberoi, Bangalore. We were graciously invited by Pinky for a cook out with the chef last Saturday. Chef Sweety did a live demonstration of Amritsari Machhi De Pakode, sharing anecdotes from his childhood and his cooking experiences. He discussed his cooking style and advice that he would like to share with next generation chefs. Post the cooking, we sat down for a hearty Punjabi meal in much anticipation.
Punjabi Food Fest with Chef Sweety Singh at Le Jardin
A very nice menu with a lot of delicious Punjabi fare were served. There were some true blue Punjabi dishes, and some mainstream ones that the chef selected for his curated menu. Beetroot Tikki, Malai Kukkad Ki Tikki, Tangdi Kebab and so so much more. The Bhatti Ka Meat (Lamb Chops) were divine, the long marination made the meat succulent and rich. Baingan Ka Bharta, Khumb Masala, Amritsari Chholey and Matar Paneer Ki Bhurji were very, very well prepared. These dishes were simple in preparations but really enjoyable and lipsmackingly delicious. Kukkad Dahi wala which goes very well with Wadiyanwale Chawal deserves a special mention too.
What was different about this meal? While it was hearty and delicious meal, the dishes were not loaded with cream and butter. Chef Sweety Singh’s cooking looks at simple ingredients and relied heavily on patience and slow cooking. The buffet spread at Le Jardin features his dishes for this ongoing food festival. We quite liked the Gajar Ka Halwa and Moong Dal Halwa, and I tried Panjiri for the first time, dessert made from suji fried in sugar, ghee and heavily laced with dried fruits.
