June has been quite a fabulous pop ups month in Bengaluru. And one specifically that was super special was the limited time Dehlnavi cuisine pop up at ITC Gardenia. Indian food is done best in ITC Hotels, it’s been my view for the longest time. ITC Hotels have carried the culinary-advocacy of heritage and modernist India. Through an ever-evolving research on dining experiences under the scrupulous supervision of the Master Chefs. Dehlnavi was one such unique curation. One that explores the taste of Delhi’s cuisine influenced from Mughal, Baniya, Kayasth, Punjab and many more.
The journey of Dehlnavi
Served at homes, by food carts or at the high table, Delhi’s flavours have evolved. Successive settlers have invested in the city with their own heirloom flavours and sense of urbanity. And thus came to be Dehlnavi, the story of Delhi through food and flavours! In Bengaluru, the trail dinner pop up lasted four-days at ITC Gardenia in Cubbon Pavilion. The culinary showcase was led by cuisine authority Chef Rais – ITC Maurya & Chef Mofid – Welcomhotel Sheraton New Delhi came down to Bengaluru.
We were invited for a preview sit down dinner. The food trail started off with chaats such as papdi chaat, and the unique kulle ki chaat, Bhe ke Kebab, Tulsi ke kebab that were absolutely mouth watering and delicious! Then we went on to try the kebabs and fries, like Purani Dilli Fried Chicken and Fish Fry will reflect the vast diaspora of Mughlai kebabs and street foods of Delhi.
The main course, however will remain the highlight of the fare. And perhaps for the first time ever, the vegetarian side had equally enticing dishes. We had Dal Dehlnavi served with a crisp biscuitty roti, sarso saag, matar paneer – the rich, spicy and aromatic flavours were brilliant! The non-vegetarian fare on the other side will be as royal as it could get. We had the all-time favourite Dilli Butter Chicken in luscious gravy, the extravagant Nihari and Gosht Pulao too irresistibly delicious and added the perfect touch of Mughlai to the unforgettable experience.
